  1. 3/4 cups pasta
  2. 4 cups water
  3. 1/2 Tsp salt
  4. 2 tbsp oil
  5. 1/2 onion cut in squares
  6. 1/2 capsicum cut in squares
  7. Special kadhai masala
  8. 1 tbsp saboot jeera/ cumin seeds
  9. 1 tbsp saboot dhaniya/ corinader seeds
  10. 1 tbsp saboot fiki sauf/ fennel seeds
  11. 1-2 whole dry red chilli
  12. 4-5 black pepper whole
  13. For the gravy/sauce
  14. 2-3 tbsp refined oil
  15. 1 TSP jeera/ cumin seeds
  16. 1 TSP saboot dhaniya/ corinader seeds
  17. 1 dry whole red chilli
  18. 2 large onions chopped
  19. 1/2 tbsp ginger garlic paste
  20. 1 tbsp prepared kadhai masala
  21. 1 TSP degi red chilli powder or less
  22. 1/2 Tsp haldi powder(turmeric powder)
  23. 2 tbsp besan/ gram flour
  24. 3 tbsp cream or malai
  25. 1/2 cup tomato puree
  26. 1/2-3/4 cup water
  27. 1 TSP garam masala powder
  28. 1 tbsp kasoori methi
  29. 2-3 tbsp chopped green coriander

Steps to make to make Kadhai pasta masala

  1. The kadhai dishes get there unique flavour and taste from a special kadhai masala. We will prepare this masala first.
  2. In a pan dry roast the jeera, dhaniya, Saunf, dry red chilli and black pepper whole for 2-3 minutes on low heat. Cool and coarsely grind. Keep aside.
  3. In a pan heat 1 tbsp oil on high heat add the capsicum and onion squares. Roast till small golden spots appear. Remove and keep aside.
  4. To prepare the sauce, heat oil in a kadhai. Add jeera, saboot dhaniya and whole dry red chilli. Roast for 30 seconds and add the chopped onions.
  5. After 2-3 minutes add the ginger garlic paste. Mix and keep cooking till onion turns golden brown and oil is released.
  6. Now add 1 tbsp of prepared masala, degi red chilli powder and haldi powder. Mix well. Roast for 1 min.
  7. Now add besan and roast for 1 min more. Add the cream or malai mix well.
  8. Now add the tomato puree and mix. Add salt and mix again.
  9. Now add water and bring it to a boil. Reduce the heat add garam masala and kasoori methi. Your sauce is ready.
  10. To make the pasta, boil the water and add salt and oil to it. Add pasta to boiling water and cook for 10 minutes. Drain in a colander and refresh with cold water. Keep aside.
  11. In a pan add a cup of prepared sauce. Heat it up, now add the prepared onion and capsicum. Mix.
  12. Finally add the pasta and mix well to coat. Check the seasoning.serve hot garnished with chopped green coriander. Yummy kadhai pasta masala is ready.
